Growing up my grandma used to make this delicious spinach and potato soup. My first winter on keto, I craved this soup. So, I called my grandma, and we worked out a version of her recipe that was low carb, filling, and scrumptious.
This recipe is easy to make and is an excellent way to get in all the fats you need for keto. This soup is 49% fat, 2% total carbs (only 3 net carbs), and 6% protein. It also keeps well and is perfect for lunches or dinner on the go. Make a batch on Sunday, and enjoy it throughout the week.
Ingredients:
1 cup chopped, Carrots, raw (optional)
16 T., Butter
1.17 cup, Frozen Chopped Spinach
15 oz, Cauliflower
16 tbs, Heavy Cream
4 cup, Chicken Broth (Can sub for homemade bone broth or veggie broth - nutritional info will vary)
Instructions:
Melt Butter
Add broth and bring to a boil
Add heavy cream, lower heat, stir
Add carrots and cauliflower, simmer for 15 minutes
Add spinach and simmer for another 15 minutes
season with salt and pepper to taste and enjoy!
